

Well, I am from the Midwest so I am a corn lover! You get the best corn here in the summer (as well as tomatoes.) Since we are corn snobs we don’t like it when it’s not in season but we tend to miss it in the winter. I found a tip that will give you at summer sweet corn flavor even when it’s not in season.
My secret ingredient is Sugar! Yes, you heard me (I mean read me). I don’t think it’s that big of a secret but if you find whole corn on the cob… say in the middle of December… go ahead an buy it. Just add some sugar to the water to sweeten it. Corn has a way of absorbing the sweetness while it’s cooking. I’ve done this trick many, many times. Until I pointed out what I was doing my family didn’t notice. They were amazed at how good the corn was off season..
Depending on how much corn you buy you would use no more than 1/2 a cup white granulated sugar. Maybe less. It does the trick!
Since we are talking about corn I thought I’d add a recipe that a friend of mine shared with me.
Hot Corn Dip
Ingredients:
1 (15 oz) can each yellow and white corn, drained
1 (10 oz) can diced tomatoes with green chile peppers, drained
1 (8 oz) package cream cheese, softened and diced
1/2 tsp chili powder, garlic powder
Fresh chopped cilantro, salt and pepper to taste (optional)
Directions:
Preheat oven to 350 degrees. In a medium baking dish mix all ingredients. Bake in a preheated oven for 30 minutes or until bubbly. Server with tortilla chips or toasted bread.
